Appearance: The cylindrical shape with flat faces and straight sides, weighing between 9 and *2 kg. The compact, rough, hard, grey crust, inedible. The compact, crumbly, straw-coloured paste is characterised by an intense development of green mould. Strong and slightly spicy flavour. The minimum maturation period is eighty days.
