Sweetener Aspartame

Aspartame was discovered by James M. Schlatter in ***5. The chemist works at G.D.Searle&Company. When he synthesizes an ulcer suppressant drug, he inadvertently rubs his finger and finds that aspartame is sweet. Since aspartame is about **0 times sweeter than normal sugar, it also contains less calories than normal cane sugar; one gram of aspartame has about 4 kcal of calories. However, the amount of aspartame required to make people feel sweet is so small that they can ignore the calories they contain and is therefore widely used as a substitute for sucrose. The taste of aspartame differs from that of normal cane sugar. Aspartame's sweetness is slower and lasts longer than sugar, but some consumers find it unacceptable and therefore some consumers do not like to use sugar substitutes. If you mix acesulfame with aspartame, the resulting taste may be more like sugar.
